Already in its third year of development, this program is operates two days per week during the school year. Unity High, youth ages 14-18, learn about social entrepreneurship through culinary arts and sustainable agriculture. They learn from OFC's teaching staff how to prepare healthy whole foods recipes such as chicken alfredo pasta, specialty breads, and delicious baked treats. Student participants learn about a variety of diet based approaches to health.
Currently, we are training 15 youth in basic culinary over the 2007-08 school year. Starting in January 2008, they will begin operating the Purple Lawn Cafe, a service-learning project of OFC, consisting of a mobile food service tent with the capacity to serve hot fresh meals on site. Each summer, for example, this program includes an in-depth approach to cooking with nutrition classes and business classes in small cafe management, along with gardening and food system field trips to farms, bakeries, farmers markets, community gardens and restaurants. This approach encourages youth to not only consider what is happening with food in their community, but to also consider the growing 'green' food movement happening throughout the Bay Area and beyond.
Our main priority with this evolving program is to encourage more Unity High youth to take serious the notion of what it means to have access to healthier food sources on their school campus and in their surrounding community. By encouraging creative, new and innovative ideas about food preparation, they have begun a life-affirming quest of responsibly preparing energy packed meals for their families and community members.
OFC is deeply committed to serving the best nutritious foods possible. We've worked with Unity High School for the past three years in designing a nutritious lunch program that serves fruits and vegetables grown without pesticides, meats from properly fed animals, vegan and vegetarian options. Lunch meals typically cost $1 - $1.50, served with organic juice for $0.50. We take our daily food sales and recycle them directly into this program in order to keep it going. Moreover, we educate and engage Unity's students in preparing Unity's lunch after school.
