Creamy Spinach-Leek Fritters
1 cup chopped fresh spinach
1 cup brown rice flour
1 cup organic milk (desired flavors: butter, kefir, or coconut milks)
1/2 cup thinly chopped leek
1/4 cup chopped parsley or cilantro
1 egg (if not desired, can replace with 3 tsp ground flax seed)
1 tsp fresh ground nutmeg
1 tsp baking soda
Oils for sautéing: grapeseed, canola, peanut
Mix together all ingredients in a large glass or metal mixing bowl.
Shred carrots and yams. Blend together with egg & desired milks. Batter has thick consistency to be dropped by spoonfuls into hot cooking oil such as coconut or grapeseed (these oils have higher burning temps).
Browning takes about 3-6 minutes for each side. Flip to brown other side, then pat while remaining side is cooking.
